Well who can say no to Desserts; especially when its sweet fritters like these.  πŸ˜‰

These Banana and Coconut Fritters are simply amazing. You can’t eat just one. They are so GOOOOD! Well me, I can eat these crispy babies any time of the day. πŸ˜€

They are sweet but not very sweet and these are fragrant because of the addition of freshly ground cardamom powder and then rolled in cinnamon sugar. The best part is these banana and coconut fritters can be whipped up with in under 30 minutes. 

Serve these fritters as it is with tea or coffee or as a dessert with ice cream or best is with chocolate dipping sauce. Yes, these banana and coconut fritters are remarkable with chocolate sauce too.

Who loves those spotty, ugly soft ripe bananas lying on your kitchen counter for days. Well I can say that I am not that person. We make smoothies quite a lot, so at home we have bunches of bananas with varying degrees of ripeness on the counter so that we have steady supply of bananas for smoothies and I especially leave a few for over ripening to make desserts. πŸ˜‰

I love soft ripe bananas only when they are transformed into a delicious cake or even better these FRITTERS, and believe me no matter how ugly these ripe bananas look, desserts made with them are simply delicious. You just can’t resist. TRUE!

Just recently, I had made this Nutella Swirled {Chocolate Chunk} Peanut Butter Banana ONE Skillet Cake , a super delicious cake with all the peanut butter and nutella and chocolate chunks goodness in it. And the best part is everything mashed-mixed and baked in one single skillet. How amazing is that!

These Banana and Coconut Fritters are simply extra-ordinary!  I learned to make these fritters from Maa. 

I remember devouring these babies down warm within few minutes of frying. These banana and coconut fritters used to taste amazing.

The banana, coconut and the cardamom powder, all these flavours blends in so well. The addition of cardamom powder in the banana-coconut batter just takes it to the next level. And as you are frying your kitchen and your house will smell divine! πŸ™‚

I made the batter with whole wheat flour and rice flour. You get a nice crispy texture of these fritters because of the rice flour. To make this fritters more interesting, you can add raisins and/nuts in the batter.

Yields 24
Crispy fried banana and coconut fritters, spiced with fragrant cardamom powder and finally rolled in cinnamon sugar; these fritters are crispy and crunchy on the outside and soft and fluffy on the inside. Absolutely delicious and delightful to eat.

Ingredients
  1. 3 ripe bananas
  2. 1/2 cup freshly grated coconut or dessicated coconut
  3. 1/2 cup+2 tbsp whole wheat flour
  4. 1/4 cup Rice Flour
  5. 1/4 cup caster sugar/brown sugar
  6. 1/2 tsp freshly ground cardamom powder
  7. 1/2 tsp baking soda
  8. pinch of salt
  9. Oil for deep frying
  10. cinnamon sugar for coating the fritters
Instructions
  1. In a medium sized bowl, mash the bananas.
  2. Add the whole wheat flour, rice flour, coconut, baking soda, sugar and salt to the mashed bananas and mix everything well to make a thick batter.
  3. Heat oil in a deep pan for deep frying the fritters on medium heat.
  4. Now drop a spoonful of batter into the oil a little at a time and fry until golden brown.
  5. Roll the warm fritters in the cinnamon sugar.
  6. Enjoy it warm or cold.
