Bengali style Nimki recipe | Namak para recipe | Diwali Namak para recipe

Nimki is a crispy & spicy all time favourite Bengali snack recipe. This ajwain and chilli flakes Nimki or namak para is thinly rolled and folded with ghee and then deep fried to perfection. Absolutely wonderful with a cup of adrak wali chai.

Equipment

  • deep frying pan

Ingredients

  • 1 1/2 cup All purpose flour / Maida
  • 1 tsp Ajwain
  • 1/2 tsp Dried Chilli flakes
  • 1/2 tsp freshly crushed black peppercorn
  • 1 tsp Salt
  • 2 tbsp Ghee plus 2 tbsp for layering
  • Oil for deep frying
  • Water for kneading the dough

Instructions

  • In a large bowl add the flour, ajwain, chilli flakes, crushed peppercorns, salt and 2 tbsp ghee and mix well. Now rub the flour and ghee with your fingers until it resemble bread crumbs or look crumbly.
  • Now add water slowly and knead into a smooth tight dough. cover and keep it aside for 30 minutes.
  • After 30 mins knead the dough again for 2 to 3 minutes. Divide it into 18 small lemon sized balls.
  • Heat oil in a deep frying pan on medium to low heat.
  • Now roll out a piece of dough ball into a 4-5 inch thin circle and prick it with a fork all over. Then apply a little ghee on the circe and fold it into a triangle. Continue making the nimki with the rest of the dough in the same way.
  • Fry the nimkis a few at a time in medium to low heat for 8-10 minutes. Drain with a slotted spoon and let it cool.
  • Once its cooled down store it in an airtight container or enjoy with a cup of tea.
