Ingredients

To make the Bhaji

  • 2 medium Potatoes
  • 1 Green or red Bell pepper /Capsicum
  • 1 medium Carrot
  • 1/2 cup Green Peas
  • 1 medium Onion chopped
  • 2 medium Tomatoes
  • 1 1/2 tsp Ginger-garlic paste
  • 2-3 tbsp Pav Bhaji Masala
  • Kashmiri Red Chilli powder
  • Salt as per taste
  • 2 tbsp Butter

For Pav Bhaji Bread Katori Chaat:

  • 10-12 Brown bread slices
  • 2 tbsp Butter melted
  • 1/2 tsp Pav bhaji masala
  • 1/2 cup Onion chopped
  • 2-3 tbsp Corinander leaves
  • 2-3 tbsp Sev
  • 1 lime cut into small pieces

Instructions

To prepare the Bhaji:

  • Add potatoes, capsicum, carrot, peas in a pressure cooker along with 2 cups of water and some salt and pressure cook until they are cooked through. Let the pressure release on its own. Remove the veggies from the cooker and keep it aside. Do not discard the water.
  • Meanwhile heat butter in a large pan on medium heat. When hot add chopped onion and saute until it is soft and light brown.
  • Next add ginger garlic paste and saute until the raw smell disappears.
  • Add in the chopped tomatoes along with some salt and saute until them until soft and mushy.
  • Next Add the chilli powder and pav bhaji masala and mix everything well.
  • Finally add the soft boiled potatoes, peppers, peas and carrots (or any vegetable you desire to use) and start mixing and mashing with the masala with the help of a masher.
  • Add the vegetable stock a little as a time and continue mashing until everything is mixed well and totally mashed. Check the seasoning and salt or more pav bhaji masala if required.
  • The bhaji is on the thicker side. Take it off the heat and let it cool.

To assemble the pav bhaji katori chaat:

  • Preheat the oven to 175 ° C.
  • Add pav bhaji masala to the melted butter and mix well. keep is aside.
  • Roll out one bread with a rolling pin and cut it with a round cookie cutter.
  • Brush the bread on both sides with the butter and place it in the muffin pan. Continue with the rest of the bread and place it in the muffin tin.
  • Bake it in the oven for 8-10 minutes. Bread katori is ready.

To assemble:

  • Add the bhaji to the katori and top it up with chopped onion, coriander leaves, sev and lime wedges.
  • Serve it with some Chai.
