Date Palm Jaggery Whole Wheat Loaf

Date Palm Jaggery Whole Wheat Loaf is a healthy and delicious moist cake. This eggless cake and sugarless cake is slightly sweetened with Khejur er gur (date palm jaggery) and loaded with nuts and raisins makes it a perfect healthy tea time accompaniment.

Equipment

  • 2 lb loaf tin
  • Large bowl
  • spatulla

Ingredients

Dry Ingredients

  • 225 gram Whole wheat flour / Atta
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • pinch of salt
  • 1/2 tsp Cardamom powder

Wet ingredients

  • 1 cup Date palm Jaggery (or any jaggery that is available) grated
  • 3/4 cup Oil (sunflower/veg)
  • 1/2 cup Yogurt

Other Ingredients

  • 1/4 cup Walnuts
  • 2-3 tbsp Raisins
  • 2 tbsp Cashews/almonds
  • 2 tbsp water

Instructions

  • Preheat the oven to 180°C and brush the baking tin with some oil and line it with a parchment/baking paper.
  • In a large bowl sift together whole wheat flour, baking powder, baking soda, salt, cardamom powder and keep it aside.
  • In another bowl add jaggery, oil, yogurt and whisk it well until the jaggery melts completely.
  • Next add the dry ingredients to the wet ingredients along with the water and with a spatula fold it together until everything comes together. It will be athick batter.
  • Now add the raisins and nuts in the batter and give it a gentle mix. Do not over mix
  • Slowly pour the batter in the baking tin and top it up with some nuts if you wish to.
  • Bake in the preheated oven for 35-40 minutes.
  • Check it with a toothpick after 35 minutes if it comes out clan take it out of the oven.
  • Cool it completely in a cooling rack. Cut it into slices and serve it with some tea or coffee or milk.
