Strawberry Shrikhand
Strawberry Shrikhand a Maharashtrian dessert is creamy and delicious, bursting with fresh strawberry flavour. Strawberry shrikhand is made with thick hung curd and fresh strawberry puree flavoured with a generous pinch of cardamom.

- 600 grams Yogurt
- 1 1/2 cup Fresh Strawberries roughly chopped
- 3-4 tbsp Sugar/ brown sugar/ Sweetener/ Honey/
- 1/2 tsp Cardamom powder
Lay a cheese cloth on a strainer and add the yogurt in it slowly. Now bring the sides together and slowly press to remove the whey as much possible. Then keep it in the strainer with a bowl underneath and place it in the fridge for at least 2-3 hours or over night.
Add the chopped strawberries in a mixer grinder along with the sugar/brown sugar and ground into a puree.
This step is optional. Strain the strawberry puree to discard the strawberry seeds (I lie my shrikhand really smooth and creamy).
Now add the thick curd in a large bowl along with strawberry puree, cardamom powder (if using honey or sweetener add it now) and mix everything together with a whisk.
Slowly spoon the shrikhand in serving bowls and garnish with chopped up strawberries and pistachios or any nuts of your choice.
Serve it chilled as desserts.
