Chocolate Ginger Chia Pudding Popsicle
Chocolate Ginger Chia Pudding Popsicle is creamy, slightly sweet and super yummy chocolate popsicles with a hint of fresh ginger flavour. They are healthy and vegan and perfect for kids and adults to enjoy on a hot Summer day.

- 2 cups Milk of your choice (cows milk/almond/coconut)
- 1/4 cup Cocoa powder (25 grams)
- 1/4 cup Chia seeds
- 1 inch Fresh Ginger *** grated and squeezed
- 1/4 tsp Ginger powder** (optional)
- 4-5 tbsp Honey/maple syrup/sugar/sweetener (as per your taste)
- 1/2 tsp Vanilla extract
- 1 tbsp Crystallised Ginger chopped (optional)
First start by grating the fresh ginger and add it to a muslin cloth and squeeze out the ginger juice in a small bowl as much as possible. Discard the squeezed grated ginger.
In a large bowl add the cocoa powder, honey, ginger juice, ginger powder,vanilla, pinch of salt and mix it with a fork until the mixture is thick and uniform.
Slowly pour the milk of your choice over the thick cocoa-honey mixture and whisk it well.
Add the chia seeds along with the crystallised ginger if using and whisk it well. Cover and keep it in the refrigerator for at least 2 hours for the chia seeds expand.
Take it out of the fridge and pour it or spoon it in 6 popsicle moulds and freeze.
Freeze until frozen.
**If you don't have ginger powder, add another 1 teaspoon of fresh ginger juice in the pudding.
***If you do not have fresh ginger add 1/2-1 teaspoon (or as per your taste) of ginger powder in the pudding.
