Indori Khopra Patties is a crispy and delicious potato patties filled with a spicy, tangy and sweet coconut and dried fruits stuffing. Every bite of these pillowy soft stuffed mashed potato patties is heavenly!
In a large bowl mash the potatoes properly witha masher. To that add arrowroot or corn flour and some salt and pepper mix it well and make a fine dough.
In another bowl mix together coconut, coriander leaves, chilli powder, aamchur powder, ginger, salt, chopped raisins and cashews.
Now divide the dough into 10 equal parts. take one potato ball and flatten it on your palm. now stuff it with the prepared coconut stuffing.
Now bring the sides together and roll it slowly into a ball. (Originally khorpa patties is round shaped patties and deep fried. but I slightly flattened it as I wanted to pan fry the patties. You can keep it round if you are planning on deep frying the patties.)
For deep Frying: Heat oil in a deep frying pan on medium heat and when hot slide in the patties slowly in batches and fry until crispy and golden brown.
For Pan frying: Heat 2 tbsp of oil in a skillet on medium heat, when hot place the prepared patties on the pan and fry. turning once.
Fry until golden brown on both sides. Khopra patties are ready.
Serve it hot with tamarind chutney or spicy green chutney.

***If you are making it during a religious fasting use arrowroot and not corn flour.
