Indori Khopra Patties

Indori Khopra Patties is a crispy and delicious potato patties filled with a spicy, tangy and sweet coconut and dried fruits stuffing. Every bite of these pillowy soft stuffed mashed potato patties is heavenly!

Equipment

  • Large bowl
  • Thick bottomed pan, Kadhai

Ingredients

For the potato

  • 4 large Boiled Potatoes (arnd 450-500 gms)
  • 3 tbsp Arrow root or Corn flour***
  • Salt & Pepper (as per taste)

Coconut Stuffing

  • 3 tbsp Dessicated coconut
  • 2 tbsp coriander leaves chopped
  • 1 tbsp Raisins, chopped
  • 7-8 Cashew nuts, chopped
  • 1/4 tsp Amchur (dried mango powder)
  • 1/4 tsp Chilli powder
  • 1/2 tsp Ginger (finely grated)
  • Salt as per required

Other ingredients

  • Oil for frying the patties
  • Tamarind chutney
  • Green Chutney
  • Nylon sev (optional)

Instructions

  • In a large bowl mash the potatoes properly witha masher. To that add arrowroot or corn flour and some salt and pepper mix it well and make a fine dough.
  • In another bowl mix together coconut, coriander leaves, chilli powder, aamchur powder, ginger, salt, chopped raisins and cashews.
  • Now divide the dough into 10 equal parts. take one potato ball and flatten it on your palm. now stuff it with the prepared coconut stuffing.
  • Now bring the sides together and roll it slowly into a ball. (Originally khorpa patties is round shaped patties and deep fried. but I slightly flattened it as I wanted to pan fry the patties. You can keep it round if you are planning on deep frying the patties.)
  • For deep Frying: Heat oil in a deep frying pan on medium heat and when hot slide in the patties slowly in batches and fry until crispy and golden brown.
  • For Pan frying: Heat 2 tbsp of oil in a skillet on medium heat, when hot place the prepared patties on the pan and fry. turning once.
  • Fry until golden brown on both sides. Khopra patties are ready.
  • Serve it hot with tamarind chutney or spicy green chutney.

Notes

***If you are making it during a religious fasting use arrowroot and not corn flour.
