Rosh Bora | Bengali Sankranti
Rosh Bora is a traditional Bengali Sweet recipe. Rosh bora pitha, a winter delicacy that is made with fennel flavoured urad dal bora or fritters soaked in nolen gur (date palm jaggery) syrup or sugar syrup.

To make Urad Dal Bora/Fritters
- 1 cup Urad Dal soaked over night or upto 8 hours
- 1 tsp Fennel seeds
- 1/4 tsp Salt
- Oil for deep frying
To make Sugar/Nolen gur Syrup
- 350 grams Sugar / Jaggery
- 3-4 cups Water
- 2 Green Cardamom
Making the daler bora
Drain the water from the soaked dal.
Then add the urad dal to a mixer grinder and sprinkle some water. Ground it into a fine paste.
Roughly pound the fennel seeds in a pestle motor.
Then add it to the batter.
Now with a fork or hand mix and whisk the batterfor 4-5 minutes until light and fluffy. Add little water (a tsp at a time if you think the batter is too thick) an mix it well.
Frying the urad dal bora/fritters
Heat enough oil in a frying pan to deep fry the bora on medium heat. Now drop few balls of batter in the hot oil with the help of a spoon or fingers. DO not over crowd the pan.
Fry the fritters flipping once in awhile for 5 minutes until golden brown on all sides.
Take it off the hot oil with a skimmer and add it to a paper towel.
Finally add the fried bora/fritters in the hot syrup and boil for 2 mins. turn off the heat and keep it covered for atleast 1 hour for the boeras to soak up the syrup.
Serve it warm or cold.
