Heat a pressure cooker on medium to low heat. Add the moong dal and dry roast it until golden brown or releases a nutty aroma.
Add it to the pressure cooker along with 3 cups of water along with salt and pressure cook for 4-5 whistles or until the dal is 95 percent cooked.
Meanwhile heat a teaspoon of oil/ghee and and fry the cauliflower florets until golden brown. Remove from the heat and keep aside.
Now add the fried cauliflower, paneer, green peas, turmeric powder and sugar and mix everything well. Add water to adjust the consistency as per your liking and simmer for 8-10 minutes or until the cauliflower florets are cooked through.
Now for the tempering, heat ghee/oil in a small pan then temper the oil with bay leaf, red dried chilli, cumin seeds, hing and grated ginger. Add it to the dal and give it a boil.
Sprinkle with coriander and serve it hot with rice and begun bhaja.
