Homemade Desi Ghee | How to make Ghee with Butter | Clarified butter

"LIQUID GOLD" called Ghee is a versatile and quintessential condiment in each and every Indian house hold. Desi ghee also known as Clarified butter is creamy, rich with a nutty flavour and aroma.

Equipment

  • large thick bottomed pan or Kadhai

Ingredients

  • 1 kg Butter (I used unsalted butter)

Instructions

  • In a large thick bottomed pan add the butter slabs.
  • Let the butter melt slowly on a medium-low heat. It takes around 8-10 minutes. Resist stirring the butter.
  • Once the butter is melted, it will start to bubble and boil.
  • Continue simmering the butter on low heat for 10 -12 minutes. Some milk proteins rise and sit on the surface as it separates from the water and fat. At this point if you want you can discard the white solids from the surface with a spoon. (I did not discard)
  • Some of the milk solids sink in and settle down at the bottom. Slowly you will see the scum turning golden brown in colour.
  • Now is the crucial step. Continue simmering the butter on medium-low heat. Do not take your eyes off the butter at this point. When the butter slowly starts changing to a beautiful golden colour and the the milk solids turn amber brown. And you will slowly get a rich-nutty aroma. Switch off the flame and take it off the heat.
  • Skim off the foam after removing from heat. Leave it aside for 10 mins for all the amber brown milk solids to settle down completely. Strain and pour it in individual sterilised glass bottle (preferably). Home made ghee if stored properly will keep for 6 months to 1 year.
