These Banana and Coconut Fritters are simply amazing. You can’t eat just one. These fritters are delicious. Well me, I can eat these crispy babies any time of the day. 😀
These banana fritters are mildly sweet. The addition of freshly ground cardamom powder and cinnamon sugar adds up to the aroma. The best part is these banana and coconut fritters can be whipped up with in under 30 minutes.
Serve these fritters as it is with tea or coffee or as a dessert with ice cream or best with chocolate dipping sauce. Yes, these banana and coconut fritters are remarkable with chocolate sauce too.
Why overripe bananas?
Who loves those spotty, ugly soft ripe bananas lying on your kitchen counter for days. Well I can say that I am not that person. We make smoothies a lot; we tend to have bunch of bananas with varying degrees of ripeness on the counter. This leaves us with a steady supply of bananas for smoothies. I tend to leave a few for over ripening to make desserts. hehe.. 😉
I love soft ripe bananas only when they are transformed into a delicious cake or even better these FRITTERS, and believe me no matter how ugly these ripe bananas look, desserts made with them are simply delicious. You just can’t resist. TRUE!
Since we are talking about over ripe bananas, here is one easy and delicious Moist Banana Loaf with Raisins, Walnuts and Chocolate Chips.
Just recently, I had made this Nutella Swirled {Chocolate Chunk} Peanut Butter Banana ONE Skillet Cake , a super delicious cake with all the peanut butter and nutella and chocolate chunks goodness in it. And the best part is everything mashed-mixed and baked in one single skillet. How amazing is that!
These Banana and Coconut Fritters (Kolar Bora) are simply extra-ordinary! I learned to make these fritters from Maa.
I remember devouring these babies down warm within few minutes of frying. These banana and coconut fritters used to taste amazing.
Banana and Coconut Fritters (Kolar Bora)
The flavours of banana, coconut and cardamom powder all blend in together so well. Adding cardamom powder in the banana-coconut batter just takes it to the next level. And as you are frying your kitchen and your house will smell divine! 🙂
I made the batter with whole wheat flour and rice flour. The rice flour gives a nice crispy texture to these fritters. To make this fritters more interesting, you can add raisins and/nuts in the batter.
SO lets jump into the oh-so-easy Banana and Coconut Fritters (Kolar Bora) recipe and please please do make these yummy fritters over the weekend and get super loved and thanked by your family and friends. 😀
- 3 ripe bananas
- 1/2 cup freshly grated coconut or dessicated coconut
- 1/2 cup+2 tbsp whole wheat flour
- 1/4 cup Rice Flour
- 1/4 cup caster sugar/brown sugar
- 1/2 tsp freshly ground cardamom powder
- 1/2 tsp baking soda
- pinch of salt
- Oil for deep frying
- cinnamon sugar for coating the fritters
- In a medium sized bowl, mash the bananas.
- Add the whole wheat flour, rice flour, coconut, baking soda, sugar and salt to the mashed bananas and mix everything well to make a thick batter.
- Heat oil in a deep pan for deep frying the fritters on medium heat.
- Now drop a spoonful of batter into the oil a little at a time and fry until golden brown.
- Roll the warm fritters in the cinnamon sugar.
- Enjoy it warm or cold.
My friends loved these Spiced Banana and Coconut Fritters (Kolar Bora) and I served it along with green tea. All the Fritters were gone in no time! 😀
