Hi guys!
Hope you are all well.
Today’s star ingredient is Chawli or Cowpeas or Black Eyes Peas They are medium-sized edible beans and has a unique natural flavour that is amazing even without spices. These cowpeas or Chawli are very nutritious and healthy and 1 cup of black eyes peas contains 107% of your daily folate requirements. Isn’t it great?!
Back home I have always had black eyes peas or chawli as a curry but never stir fried. Today I am sharing a simple and nutritious recipe that I have just come across in a very sweet friend’s Shravani’s (mycurryveda) feed. It is simple to make and so nutritious. And not to forget delicious.
This Indian black eyed peas recipe hardly uses any spices but yet so flavourful. I have added freshly grated coconut to this. It’s adds texture and new dimension to this whole preparation.
The best part is not only us but our 3 year old too enjoyed this Indian Black Eyed Peas recipe with Coconut with roti thoroughly.
