Aloo Dim Bhorta (Potato and Egg Bharta) is a delicious spiced mashed potato with eggs. It is the easiest and tastiest aloo makha (Bengali mashed potatoes) ever. Perfect side dish with hot steaming rice and Bengali masoor dal.
Today I am sharing another fab and quick Bengali dish with you that is again a pantry friendly recipe.
Aloo Dim Bharta or in simple words Aloo makha with dim. Bengali cuisine has a particular catagory of side dish where the vegetables like potatoes, eggplant, okra, sheem, bitter gourd or greens is boiled and then mixed and mashed with hands with a generous drizzle of mustard oil and onions, chillies and garlic.
This mashed veggie (makha we call it in Bengali) is then relished with rice and some dal. Such a soul satisfying and comforting dish!!
The mixing and mashing was usually done by Baba (father) right before we serve the lunch or dinner. And then divided and rolled into a ball and served on our plates. And my sister and I used to look into each other plates and compare whose got the larger one. Haha.. funny days..
Well, what to do we love potatoes and especially this spicy bharta. It has potatoes, eggs and gralicky flavoured onion-dried red chilli tempering which is all mashed together into perfection. It is basically a fancy mashed potato.
What ingredients are used to make the bharta?
Very few ingredients are used to make this tasty potato bharta. A pantry friendly dish.
- Potatoes
- Eggs
- Onion
- Garlic
- Dried red chillies
- Green chillies (optional)
- Mustard oil
- Salt

Equipment
- skillet
- Large bowl
Ingredients
- 2 large Potatoes washed and boiled
- 2 Eggs free range hard boiled
- 1 large Onions thinly sliced
- 2 large Garlic cloves chopped
- 1-2 Green chillies (optional)
- 2 Dried red chillies
- Salt as per taste
- 2 tbsp Mustard Oil
Instructions
- Add the potatoes along with 1 tablespoon and salt in a large bowl and mash it well with fork until there are no lumps.
- Heat 1 tbsp of oil in a skillet on medium heat. When hot temper it with dried red chillies and saute until they turn crispy and slightly blackened.
- Next toss in the chopped garlic and sliced onions, green chillies (if using) and saute in the oil for 5-6 minutes stirring frequently. Saute until the onions turn golden brown. Take it off the heat.
- Add the sauted onions, dried red chillies and the boiled eggs to the mashed potatoes. Crush and mash everything together with hands until no lumps are seen. Check the seasoning and salt if required.
- Garnish with coriander and serve it hot with rice and dal or parathas.
