It’s crazy hot here in the UK since last few days. 34 degrees can you believe. It is so freaking hot and all we are craving is something chilled or frozen treats. SO instead of going for icecreams I made these yumaazing and healthy chocolate chia pudding popsicles to enjoy in this super HOT day. You can also be enjoyed them any time of the day, as a brekkie as well. They are just perfect.
Chocolate and ginger is one of my favourite flavour combos of all time. Be it chocolate ginger biscotti or chocolate ginger icecream or even ginger spiced hot chocolate , I feel they are a match made in heaven.
This guilt free frozen chocolate ginger chia pudding popsicle went down as a treat with my 3 year old as well. So it is a win win kinda situation.
What are the ingredients used to make the Chocolate Ginger pops?
- Cocoa powder (I used Callebaut)
- Milk of your choice( coconut, almond or plain cows milk)
- Fresh Ginger
- Ginger powder
- Vanilla extract
- Chia seeds
- Honey/maple syrup/ sweetener/ brown sugar
I have used fresh ginger juice in this chia pudding popsicle. If you don’t have fresh ginger you can use 1/2 to 1 tsp of ginger powder (or as per taste).

Chocolate Ginger Chia Pudding Popsicle
Ingredients
- 2 cups Milk of your choice (cows milk/almond/coconut)
- 1/4 cup Cocoa powder (25 grams)
- 1/4 cup Chia seeds
- 1 inch Fresh Ginger *** grated and squeezed
- 1/4 tsp Ginger powder** (optional)
- 4-5 tbsp Honey/maple syrup/sugar/sweetener (as per your taste)
- 1/2 tsp Vanilla extract
- 1 tbsp Crystallised Ginger chopped (optional)
Instructions
- First start by grating the fresh ginger and add it to a muslin cloth and squeeze out the ginger juice in a small bowl as much as possible. Discard the squeezed grated ginger.
- In a large bowl add the cocoa powder, honey, ginger juice, ginger powder,vanilla, pinch of salt and mix it with a fork until the mixture is thick and uniform.
- Slowly pour the milk of your choice over the thick cocoa-honey mixture and whisk it well.
- Add the chia seeds along with the crystallised ginger if using and whisk it well. Cover and keep it in the refrigerator for at least 2 hours for the chia seeds expand.
- Take it out of the fridge and pour it or spoon it in 6 popsicle moulds and freeze.
- Freeze until frozen.
