We all love desserts don’t we, but sometimes it really feels good to have something that we can enjoy guilt free. Isn’t it?!
So keeping that in mind I have created this delicious and yummy eggless and sugarless cake which is a perfect cake that kids as well as adults will enjoy.
How to make Date Palm Jaggery Whole Wheat loaf?
10 minutes is all you need to prepare this guilt free cake. I have made this cake with whole wheat flour/atta and sweetened it with date palm jaggery, but it will taste equally good with sugarcane jaggery or palm jaggery or any jaggery that is available. You can also make it with all purpose flour or maida if you wish to.
I have added a little bit of crushed cardamom powder (my favourite spice) to this cake which by the way takes it to the next level of deliciousness. The aroma that arises as it bakes away in the oven make it over the more irresistible.

Equipment
- 2 lb loaf tin
- Large bowl
- spatulla
Ingredients
Dry Ingredients
- 225 gram Whole wheat flour / Atta
- 1 tsp Baking powder
- 1/2 tsp Baking soda
- pinch of salt
- 1/2 tsp Cardamom powder
Wet ingredients
- 1 cup Date palm Jaggery (or any jaggery that is available) grated
- 3/4 cup Oil (sunflower/veg)
- 1/2 cup Yogurt
Other Ingredients
- 1/4 cup Walnuts
- 2-3 tbsp Raisins
- 2 tbsp Cashews/almonds
- 2 tbsp water
Instructions
- Preheat the oven to 180°C and brush the baking tin with some oil and line it with a parchment/baking paper.
- In a large bowl sift together whole wheat flour, baking powder, baking soda, salt, cardamom powder and keep it aside.
- In another bowl add jaggery, oil, yogurt and whisk it well until the jaggery melts completely.
- Next add the dry ingredients to the wet ingredients along with the water and with a spatula fold it together until everything comes together. It will be athick batter.
- Now add the raisins and nuts in the batter and give it a gentle mix. Do not over mix
- Slowly pour the batter in the baking tin and top it up with some nuts if you wish to.
- Bake in the preheated oven for 35-40 minutes.
- Check it with a toothpick after 35 minutes if it comes out clan take it out of the oven.
- Cool it completely in a cooling rack. Cut it into slices and serve it with some tea or coffee or milk.
